Crunchy Beet and Carrot Slaw with Apple

This crunchy beet and carrot slaw with apple is a crisp, colorful side that is quick to prepare and kids tend to love it! I first developed this recipe for our local food bank, and it became an instant hit with our girls – who would have guessed that beets could be a kid favorite?! They are definitely one of my go-to vegetables, especially in the fall and winter.  Serving them raw highlights their versatility. 

Bright and earthy, beets provide nutrients that support digestion, circulation, immunity, and natural detoxification. This dish, is a perfect way to put all the wonderful fall harvest to good use.

Step by Step Instructions for Crunchy Beet and Carrot Slaw with Apple

Gather all ingredients: Beets, carrots, apple, olive oil, apple cider vinegar, maple syrup, salt, pepper, raisins, sunflower seeds, and cilantro or parsley.

Make the dressing.

Pour the dressing over the grated vegetables, toss to coat, let the flavors meld, and then stir in the sunflower seeds, raisins, and cilantro or parsley, if using.

Coarsely grated beet, carrot, and apple slaw with a maple-olive oil dressing. Crisp, vibrant, and so easy to make, this unexpectedly kid-favorite is a nutritious, flavorful side for any meal.

Ingredients

  • 2 medium beets, peeled and coarsely grated

  • 2 medium carrots, coarsely grated*

  • 1 apple, coarsely grated

  • 2 Tbsp extra virgin olive oil

  • 2 Tbsp apple cider vinegar (or rice vinegar)

  • 1 Tbsp maple syrup (or raw honey)

  • pinch of each, salt and freshly ground black pepper

  • Optional Add-Ins
  • 1 Tbsp sunflower seeds

  • 2 Tbsp raisins

  • 2 tsp freshly chopped cilantro or parsley

Directions

  • In a large bowl, combine the coarsely grated beets, carrots, and apple.
  • In a small bowl or jar, whisk together the olive oil, apple cider vinegar, maple syrup, and a pinch of salt and pepper to make the dressing.
  • Pour the dressing over the grated vegetables and toss to coat evenly. Let the slaw rest for 10-15 minutes before serving to allow the flavors to meld.**
  • Stir in the sunflower seeds, raisins, and freshly chopped herbs, if using, and serve.

Notes

  • *If your carrots and apple are organic, you can leave the skins on for extra nutrients and color. Just be sure to wash them well before grating.
  • **For extra crunch, prepare the slaw just a little before serving. If made ahead, the vegetables will soften slightly but remain flavorful.
