Sweet Potato Apple Chutney Coins

Soon after I first went through multiple iterations of a delicious apple chutney, I was looking for a no fuss appetizer and this recipe was the perfect solution. With a jar full of apple chutney in the fridge, this beautiful sweet potato and apple chutney coins appetizer comes together in a hurry and can easily be served at room temperature, so you do not need to worry about having the sweet potato coins piping hot out of the oven.  

Simply make them earlier in the day and keep them air tight in the fridge until ready to use.  You can even assemble these little coins a couple hours ahead, refrigerate and pull them out of the fridge 20 minutes before serving.

Cut your sweet potatoes into 1/4 inch thick slices, toss in the extra virgin olive oil and sprinkle with fine sea salt and black pepper. Roast for about 30 minutes or until tender and lightly browned in spots.

This is a wonderful and easy appetizer when you have a jar of apple chutney in the fridge. It looks beautiful and is simply delicious!

Ingredients

  • 1 cup prepared apple chutney

  • 2 medium sweet potatoes, sliced into 1/4 inch thick coins (skin on if organic)

  • 2 tbsp extra virgin olive oil

  • 1/2 tsp fine sea salt and a few cracks of black pepper

  • 4 oz plain goat cheese

  • Optional
  • leaves from 1 sprig of thyme

Directions

  • Preheat your oven to 375F and line a baking sheet with parchment paper.
  • In a large bowl, toss the sweet potato slices with the extra virgin olive oil, sea salt and black pepper.  Spread them onto the prepared baking sheet in one layer (use a second baking sheet if needed) and bake for about 20 minutes or until the tops of the sweet potato slices begin to brown. Remove from the oven and flip each potato slice with a flat spatula. Return to the oven for an additional 10 minutes or until both sides are nicely browned. Remove from the oven and let cool.
  • Once the sweet potato slices have cooled, place them on a serving platter or board, top with a spoonful of apple chutney and crumbled goat cheese and scatter the thyme leaves over the top if desired.  Serve right away or refrigerate until ready to serve. 

Notes

  • This appetizer can be made several hours in advance if stored in the fridge. Simply remove from the fridge 20 minutes before serving and serve at room temperature.
