Homemade Nourishing Granola

At our house, most weekday mornings feel more rushed than I like to admit! Getting kids out of bed, cooking breakfast, making sure school lunches are packed, backpacks are good to go, everyone has a water bottle and nobody forgets clothes for their after school activities…it’s always a big juggle! Having this homemade nourishing granola on hand has saved me more than once!

I first made this version when making a little care package for a neighbor who had surgery. I wanted to include a snack that was nourishing, but would last longer than a day or two. It has become my go-to ever since. Sprinkle this on top of smoothie bowls, enjoy with coconut yogurt and fresh berries or simply pour it in a bowl with some homemade nut milk!

Add the oats, nuts, seeds and coconut flakes to a bowl and stir to combine.

Add the ground cinnamon, cloves, ginger and fine sea salt and stir. Then add the maple syrup and stir again to thoroughly coat the mixture.

Spread the granola mixture out onto a baking sheet and dap with the coconut oil.

Bake for 5 minutes or until the coconut oil has melted, then toss to coat the granola mixture. Bake for an additional 60-75 minutes, stirring every 15 minutes, until golden.

Ingredients

  • 1/2 cup each: Sliced Almonds, Coconut Flakes, Pumpkin Seeds and Sunflower seeds

  • 1 cup Pecans or Walnuts (or a combination of both)

  • 2 cups Gluten Free Oats

  • 1/2 tsp Fine Sea Salt

  • 1 tsp Ground Cinnamon

  • 1/2 tsp Ground Cloves

  • 1/2 tsp Ground Ginger

  • 1/4 cup Maple Syrup

  • 1/4 cup Coconut Oil

Directions

  • Preheat the oven to 250F and position a rack in the center of your oven.
  • In a large bowl, combine all ingredients, except for the maple syrup and coconut oil and stir to combine. Add the maple syrup and stir again.
  • Spread the mixture onto a baking sheet lined with parchment paper or a silicone baking mat. Dab with the 1/4 cup coconut oil.
  • Transfer to the oven and bake for 5 minutes. Stir to blend in the now melted coconut oil. Stirring every 15 minutes, bake the granola for another 60-75 minutes or until it has turned a nice golden brown. Remove from the oven and let cool completely. Store in an airtight glass container for up to 4 weeks.

  1. I fell in love with this recipe when a big batch poured into a lovely glass jar was given to me at Christmas. So delicious on my morning yogurt and as an afternoon snack. It’s so healthy .💚
